Galouti Kebabs have their origin in the royal kitchen of the Nawab of Lucknow. Galouti means melting in the mouth. These Kebabs are soft, delicious and flavourful as they are made with lots of spices. I have prepared my melt in mouth kebabs from rajma, suran (yam) and beetroot as base ingredients.
Ingredients and spices that need to be Get to make Galouti Rajma Kebabs:
- 1.5 cup soaked and
- 3-4 chunks boiled yam
- 1/4 cup grated beetroot(boiled)
- Dry masala
- 1 Tbsp coriander seeds
- 2 tsp fennel seeds
- 1 tsp sahjeera

- 2 mace
- 1 large cardamon
- 2 green cardamom
- 3 cloves
- 1 tsp black pepper
- 1 tsp red chilli powder
- 1/2 tsp nutmeg powder
- 1/2 tsp cinnamon powder
- 10 cashews
- 2 red chilli (not so hot)
- Other ingredients
- 1 green chilli
- 3 Tbsp Birista(fried onion)
- 2 Tbsp ginger-garlic paste
- 1 fistful of fresh mint leaves
- 1 tsp rose water
- 2 Tbsp roasted besan
- as per taste Salt
- 1 tsp+ 1/4 cup melted ghee
- as required Coriander and mint chutney
- As required Walnut and curd dip
Steps to make to make Galouti Rajma Kebabs
- First roast the dry masala. Roast red9 chilli and cashews.
- Grin the roasted ingredients to coarse powder. Set aside. Grind boiled rajma, yam and green chilli to coarse dough.
- Mix roast masala, ginger-garlic paste, fried brown onion(birista), mint leaves, grated beetroots and roasted besan. Mix well and make the rajma dough. Keep in refrigerator for an hour.
- Heat 1 tsp ghee and mix with the rajma dough. This will ensure cooking of kebab from inside also.
- Heat rest ghee in the pan. Make kebabs and ensure to roast kebab from all sides.
- To prepare Walnut, curd dip take 1/3 cup curd, 1/2 tsp chopped green chilli, salt and 4 -6 toasted walnuts chopped. Mix all and the delicious walnut curd dip ready for the kebabs.
